Market Simulation
Republic of Paradise decided to try out their farmer's market equipment ( tents, stoves, tables, etc...) last Sunday- January 29, 2012. Friends and family gathered once again for an afternoon of paradise.
The idea was to set up like we would at the markets and experiment with the flow and system of how the Republic of Paradise team works with each other- ... this is what David Sullivan calls "The Dance".

Yesterday was a beautiful sunny day! Absolutely perfect for a photo shoot! We decided to take photos of the fare to add to our business plan.
These are the sandwiches and wraps that we will be serving ( cross our fingers) this spring!
We'll also have harissa fries and tropical fruit sodas.

A Taste of Paradise During the Holidays!
Republic of Paradise gave friends and family a taste of what's coming to them- hopefully this summer!
Everyone came dressed in their tropical/winter attire ( Bright tropical-print shirts, Scarves, boots, and Sunglasses)
Vibrant auburn leaves fell from the trees, the sky was as blue and as clear as a corral reef, and the sun painted the atmosphere a warm sepia. Everyone crowded around the tent as fresh salad, harissa fries and juicy sandwiches were served on large platters.
The food was a hit and the company was supportive of this future venture! Positive level is at it's peak!

FEIJOAS/ PINEAPPLE GUAVA preserves and chutney!

This small, egg-shaped fruit is native to South America, though New Zealand is now a major exporter and California cultivates a small crop. It's also referred to as a pineapple guava , and is often mislabeled in produce sections as GUAVA. A thin, bright green skin surrounds the feijoa's exceedingly fragrant, cream-colored flesh that encases a jellylike center. The flavor is complex, with sweet notes of quince, pineapple and mint. New Zealand feijoas are available from spring to early summer; those from California reach the market in the fall. Choose fruit that has a rich, perfumy fragrance and gives slightly to the touch. Ripen by placing it in a paper bag with an apple for several days at room temperature. Ripe feijoas can be refrigerated 3 to 5 days. Before using, remove the slightly bitter peel. Feijoas are naturals in fruit salads, desserts and as garnishes. They contain a fair amount of vitamin C.
